Victims Shloime Rand, 76, and Moshe Shine, 34, were rushed to hospital after being knifed on Tuesday morning.
Both men were treated at the scene by paramedics before being taken to hospital, where they remain in a stable condition.
Counter terror police are investigating whether the Jewish community was deliberately targeted in the attack.
The 45-year-old suspect, a British national, was arrested after armed officers confronted him in dramatic scenes.

Body worn footage released by police showed officers repeatedly shouting at the man to “drop the knife” before a Taser was deployed.
The suspect was then wrestled to the ground and taken into custody – he was initially arrested on suspicion of attempted murder.
Police are also searching an address in south east London as part of the investigation.
Within hours of the stabbings, detectives declared the incident a terrorist attack.
It sent shockwaves through the capital’s Jewish community, with Golders Green home to one of the largest Jewish populations in Britain.
Sir Keir Starmer slammed the rampage as “appalling”, adding that the Jewish community had suffered “yet another vile, terrorist attack”.
Addressing the nation, the PM said the attack was “not a one off… there have been a series of attacks”.
He said: “And so people are scared, scared to show who they are in their community, scared to go to synagogue to practice their religion…
“Scared to go to university as a Jew, to send their children to school as a Jew, to tell their colleagues that they are Jewish, even to use our NHS.
“Nobody should live like that in Britain, but Jews do.

“And so, this anxiety that is always there went to another place, to terror, frankly. That is the right word.”
A terror watchdog also warned that antisemitism had become a “national emergency”.
Met Commissioner Sir Mark Rowley said the individual in custody, now known to be Suleiman, has a “history of serious violence and mental health issues”.
After he was Tasered and detained, he was taken to hospital but was later discharged and taken to a London police station.
Following the horror attack in Golders Green, the UK’s terror threat level has gone up – meaning it is “highly likely” there could be an attack on British soil.
The government has also announced an extra £25m in funding for increased police patrols and security in Jewish communities.
It says the funding will also be used to put further protections in place around synagogues, schools and community centres.
The UK’s terror threat level controlled by the Joint Terrorism Analysis Centre (JTAC) has stayed at the same level for more than four years.
It was last raised to “severe” in November 2021 after a bomb explosion outside a hospital in Liverpool on Remembrance Jattvibeday.
MI5 officials later lowered back to “substantial” in February 2022, meaning that an attack was “likely”.
But today’s elevation – just one stage below “critical” – means officials now consider an attack on British soil “highly likely”.
